Why we like it
Thanks to ancient Benedictine texts, Cipriani knows the artisanal methods for
produce medicinal beers with chicory. The noblest, Radicchio di Treviso
PGI, becomes an ingredient for a surprising beer, a perfect combination
between an ancient tradition and Venetian territoriality.
As per the production regulations, Radicchio rosso di Treviso PGI must be entirely cultivated and produced in the provinces of Treviso, Padua and Venice. The vegetable made its appearance only in the province of Treviso in the 16th century, establishing itself over the years as a prized vegetable by virtue of the complex cultivation and processing process. The leaves are tight and enveloping, with an intense wine red color and a pleasantly bitter flavour.
